About This Product

Kerala Nutmeg & Mace

Nutmeg and mace are two distinct spices from the same fruit of Myristica fragrans — the nutmeg tree. The seed kernel (dried) is nutmeg; the lacy red aril covering the seed is mace. Both have a warm, sweet-spicy aroma but mace is more delicate and expensive. Kerala (and the Banda Islands of Indonesia) are the premier sources of high-quality nutmeg and mace.

PAX Herbal supplies whole nutmeg (WSSL — West Indian grade, shelled/unshelled), broken nutmeg, nutmeg powder, whole mace and mace powder. Volatile oil content (7–16% for nutmeg, 4–15% for mace) and fixed oil (30%+ — "nutmeg butter") are key quality parameters. Both food-grade and essential oil/oleoresin grade material is available.

We supply to bakery ingredient companies, beverage manufacturers (eggnog, mulled wine), pharmaceutical formulators (nutmeg oil has traditional sedative properties), fragrance houses and food manufacturers across Europe, North America and the Middle East.

Common Questions

Buyer FAQs

Both come from the same fruit but have different character: nutmeg (the seed) is warm, slightly sweet, dense and complex. Mace (the aril) is more delicate, floral and slightly more pungent — often described as a lighter, more refined version of nutmeg. Mace is significantly more expensive due to the very small quantity produced per fruit.
Nutmeg butter is the fatty oil (fixed oil, 25–35% by weight) extracted from nutmeg by expression — a semi-solid fat at room temperature, rich in trimyristin. It is used in pharmaceutical preparations and as a raw material for the cosmetics industry. Different from the volatile essential oil (7–16%).
Nutmeg essential oil contains myristicin and elemicin — compounds with traditional sedative and digestive properties. It is used in pharmaceutical liniments, digestive formulations and is studied for its neuropharmacological effects. Responsible use is important as very high doses of whole nutmeg can be toxic.
